Sulfite can cause severe allergic reactions to sensitive individuals. Those with weakened respiratory tracts, such as asthmatics, are especially at risk. Sulfites can occur naturally in some foods, but are often added to wine, fruits, nuts and some meats to enhance and sustain color.

The sensitivities of different people to sulfites vary greatly and there is no way for Appealing Products Inc., API, to asses the sensitivity of any particular individual. Moreover, the sensitivity varies depending on what else the person ate or drank and his contemporary personal state. This PRESUMPTIVE test for sulfites is only a guideline to help rule out foods with very high sulfite content. The detection limit is between 50 and 200 ppm sulfite, depending on the food. Some errors also occur when selecting or mixing the food sample to test.
